Title: Pear Pork Stir-Fry

15ozCan pear halves or slices
12ozLean pork loin, cut into thin slices
2tbVegetable oil
2 Carrots, sliced diagonally (about 1 1/2 cups)
2 Stalks celery, sliced diagonally
1mdOnion, sliced
1/2 Green pepper, cut into 1/2" pieces
3tbBrown sugar, packed
1tbCornstarch
3tbRed wine vinegar
1tbSoy sauce
  Salt to taste
1/8tsPepper
2cCooked rice

Drain pears, reserving liquid. Cut each pear half into quarters. Saute pork in oil until browned. Add vegetables and saute until crisp-tender. Combine pear liquid with brown sugar, cornstarch, vinegar, soy sauce, salt and pepper. Add to skillet with pears. Cook and gently stir 1 to 2 minutes or until sauce is thickened and clear. Serve over rice.
